Italian tomato puree (Passata di pomodoro) is a puree of 100% ripe tomatoes, usually without seeds and skins, with a smooth and velvety texture, a sweet taste and a bright red color.

They are a traditional Italian product, obtained from fresh tomatoes, processed quickly after harvest to preserve their flavor.

They are used as a base for sauces, soups, pizzas, stews and other culinary preparations, either alone or enriched with herbs, such as basil, or with a sprinkle of salt.
