Peppermint, a hybrid of watermint and spearmint, is a perennial plant.
The essential oil is extracted from the aerial parts of the plant (everything that grows above ground).
When the peppermint is ready for harvest, it is cut to ground level, then left in the field for a few days to dry.
It is then cut into pieces before distillation.
Approximately half a kilogram of peppermint leaves produces a 15 ml bottle of oil.
In autumn, the material remaining after distillation is used as fertilizer.
